I just spent a couple of hours creating ideas for Easter Cupcakes. So here are my first thoughts...
I made a batch of Coconut Cream cupcakes from the Classic Menu. I topped them with Coconut Buttercream. I then decorated the cupcakes with some cute little Easter Picks and Mini Easter Eggs.
I also made a batch of Bite-Size Double Choc and Bite-Size Vanilla Bean cupcakes. The Double Choc topped with Chocolate Buttercream and decorated Pastel Easter Sprinkles and the Vanilla Bean topped with Pink Coloured Vanilla Bean Buttercream and decorated with gorgeous Bright Easter Egg Sprinkles.
The kids absolutely loved the Bite-Size Cupcakes!!! Of course the Coconut Cream Cupcakes are my favourite.... yum.. yum..

How do you get your buttercream icing to look so sparkly?
Hi Sugary Sweets, thank you for the question. To tell you the truth I'm not sure... The only thing I do different is that I don't use milk in my Buttercream Icing as the weather here is very warm and quite humid. I found that using milk in my Buttercream made it very unworkable. So I leave it out...
Easter Cupcakes were a hit with the kids,I must admit even us oldies enjoyed them, delicious!!!
