Busy, Busy, Busy... Night 3... The Final Installment...

Hi Everyone,

What a busy, busy, busy week.  I haven't had this many late nights in a row since I was 18 yrs old!!!  Gee am I paying for it now!

I did 11 Dozen orders last night.  3 Dozen ' Bite-Size' Vanilla Bean, 4 Dozen 'Bite-Size' Double Choc, 2 Dozen 'Bite-Size' Lemon Poppy, 1 Dozen Double Choc with Whipped Dark Chocolate Ganache and 1 Dozen Vanilla Bean especially decorated.


All the 'Bite-Size' Vanilla Bean and Double Choc cupcakes were for Christmas celebrations or Christmas gifts.  Some boxes were mixed flavours, others not mixed.  All were topped with either Vanilla Bean or Chocolate Buttercream and decorated in the Christmas theme.


The 'Bite-Size' Lemon Poppy are a delicious Lemon & Poppyseed cake, topped with lemon zest smooth cream-cheese icing and topped with poppy seeds.  Yummo...


I did a twist on the Double Choc.  Instead of Chocolate Buttercream, I topped the cupcakes with Whipped Chocolate Ganache and decorated them in the Christmas Theme.  The whipped chocolate ganache is just to die for, it is so rich and decadent...


And the finale!!!  Vanilla Bean cupcakes, with Vanilla Bean Buttercream Icing, topped with these gorgeous Blue Butterflies, Blue Flowers and Blue Sanding Sugar.  The beautiful blue toppings look fantastic against the Vanilla Bean Buttercream.

Busy, Busy, Busy... Night 2

Hi Everyone,

Okay... 2 late, late nights down, 1 to go....

I completed another 2 orders over night.  1 was for a Birthday and the other are was for Christmas.  For the Birthday order, I made my signature Coconut Cream and 'Bite-Size' Coconut Cream cupcakes.  Pink was the theme and I had free reign with the decorating.  This client will also be using the Davis & Waddell Cupcake Stand.  1 Dozen Standard Cupcakes and 1 Dozen 'Bite-Size' Cupcakes fit perfectly on the cupcake stand.  Don't they look just gorgeous!

My second order for the night was 2 Dozen  'Bite-Size' Vanilla Bean and 2 Dozen 'Bite-Size' Double Choc.  Topped with Vanilla Bean Buttercream and Chocolate Buttercream, I then decorated them in the Christmas Theme.  I then boxed them with an even mixture of each flavour per dozen.

I think the kids at the local Daycare Centre will get a kick out of their 'Bite-Size' Christmas Treats.  The remaining 2 Dozen are to be enjoyed on Christmas Day down at Tannum Sands, but I have a funny feeling they will not survive the Road Trip!!!  Merry Christmas to the Kelly's!!!

Busy, Busy, Busy...

Hi Everyone,

Boy have I been busy with Christmas orders this week.  Already 2 late, late nitghts and 1 more to go... 

On the first nite, I had a corporate order for 4 dozen 'Bite-Size' Vanilla Bean and 4 dozen 'Bite-Size' Double Choc. 
They had to be decorated in the Festive Season theme and an even mixture of both to be boxed for each of the 8 dozen ordered....  Well these are the results. 


I hope the corporate clients enjoyed them with some Christmas Cheer.

Sweet Decadent Christmas Gifts

Hi Everyone,

Another Christmas Gift order just completed.  This time I baked 2 flavours from the 'Classic' Menu: Double Choc and Gingerbread.

Starting with the scrumptious Double Choc, I topped the cupcakes with Chocolate Buttercream and decorated with silver cachous, pearlised sugar and tiny white snowflakes.


For the Gingerbread, I topped the cupcakes with delicious smooth cream cheese icing, a Buderim Ginger Bear and dusted with ground ginger.


I boxed 6 of each flavour together that way the recipients can be naughty or nice this christmas.... have a Double Choc if they want to be naughty or a Gingerbread if they want to be nice.
 









Either way, I think they will enjoy a gorgeous, yummy cupcake!!

Xmas Treats All Boxed Up!



Hi Everyone,

Just completed another Christmas order.  This time it was 4 dozen Vanilla Bean 'Bite-Size' cupcakes decorated in the christmas theme.  I baked half in red papers and half in green papers.
I topped all with the exquisite Vanilla Bean Buttercream.  I decorated the cupcakes in green papers with red & green christmas trees, red non-pariels and green jimmies.  I decorated the cupcakes in green papers with red & green holly, red non-pariels and green jimmies.

The ladies that placed the order then wanted 1 of each 'Bite'Size' cupcake to be placed in a Gold Box and wrapped with red and green ribbon.  Some of the cupcakes may have been a snug fit but all survived.

All up 20 gorgeous little Christmas Surprises were created.  I hope they are enjoyed by all as much as I enjoyed making, baking, icing, decorating and wrapping them.

Bite-Size Christmas Treats

Hi Everyone, 
Just a little over a week until Santa arrives and the orders are certainly coming in.  Everyone wants Cupcakes, and for some reason they want them in Bite-Size!!  Maybe it's so they can have more than 1 and not feel guilty... after all they are only Bite-Size. 


These orders were for 2 beautiful ladies.  The first order was Bite-Size Vanilla Bean and Bite-Size Coconut Cream.  I decorated them in the Christmas Theme.  The Vanilla Bean's look like white christmas trees and the Coconut Cream's look like pink christmas trees. 

The second order was Bite-Size 'Morish Mud' Choc Mud with Chocolate Kahlua Buttercream.  She was after something a little more decadent for the festive season.  I think all three look just gorgeous.  Nearly too good to eat.

Banana Blend Bonanza

Hi Everyone,  What else to do on a Sunday evening... I checked the refrigerator and thought about putting to good use some over ripened banana's.  My Banana Blend cupcake recipe has been adapted from an old 'fool-proof' banana cake recipe I have been using for years and years...

This time I decided to top the cupcakes half with Smooth Cream Cheese icing and half with Vanilla Bean Buttercream.  I then decorated them with yellow non-pariels and a novelty edible sugar banana!

They look so yummy.  I have decided they will be a small chrissy gift for a good friend of mine.

Just for Mum xo

Hi Everyone,

I never need a special occasion to do something for my mum.  My mum is the most amazing person that I know.  She is my mum, my best friend, my teacher, my confident, my someone I can always count on.


My mum has supported me from the beginning on this new adventure of OMG... It's Cupcakes...  Actually my mum & I came up with the name!!!

My poor mum has been a taste tester... thru the good cupcakes... and the bad cupcakes...  She never gave up, she kept going and always gave me plenty of advice until I had perfected my cupcake recipes.
So in honour of my beautifully brilliant, wonderful MUM, I baked her some Vanilla Bean Cupcakes from the 'Classic' Menu and topped them with Coconut Buttercream. 

I think of them like a dozen pink & white roses for my MUM.

A Cupcake A Day...

Hi Everyone,

A Cupcake A Day... Keeps Your Teacher Happy!!!

My 2 nephews finish the school year this friday.  I promised them a while ago that I would bake some cupcakes that they can give to their teachers as gifts for the end of the school year and christmas.


My 2 nephews are just finishing Year 1, so of course they were very excited about the idea and of course they looooooovvvvveeee their Auntie Trishie's Cupcakes!!!

I made a batch of Vanilla Bean Cupcakes from the 'Classic Menu' and topped them with Vanilla Bean buttercream.  I then decorated them with a Christmas theme.  

My nephews now have 2 each to give to their teachers.  I think they look just awesome!!!

Pretty Pink Coconut Cream

Hi Everyone,

I had a very special order today.  It was for a young lady for her birthday.  The order was for a dozen Coconut Cream Cupcakes from the 'Classic' Menu.  This young lady loves pink and white. 

I have to say that my Coconut Cream Cupcakes are to die for... they are just delicious...  I began with a moist coconut butter cake.  Then I topped 6 with coconut buttercream and 6 with pink coconut buttercream.
 

I then grabbed all the white, pink and for a contrast.. silver toppings I could put my hands on and also topped a few with roasted shredded coconut. 

I think they turned out just right.

In Heaven with Chocolate....

Hi Everyone,  For one of my order's today, I put a twist on my Double Choc Cupcake from the 'Classic' Menu. 

I think it should be called Quad Choc Cupcake!!! 


Firstly we start off with a delicious chocolate butter cupcake. 
Then it's topped with a mouth watering chocolate buttercream.. 
Then it's decorated with chocolate chip bits and a chocolate & cream wafer...  
Yum, Yum, Yum....
